This week, I’ll share some fun ‘Creations’ with and without cherries that I made to keep my food interesting! After seeing a good deal for this tub of cherries, what was a healthy girl to do?
In my “Code Red” blog post, I mention several principles that I follow. I do well on eating high carbs in the morning and lower carb meals in the evening. While this post does not have much for my Vegan, Paleo or Veggie friends, I will definitely have something for you too soon enough! (See my other posts as well!)
This was pretty simple.
Turn on the heat and put some olive, flax or coconut oil in the pan
Let it get a little hot
Pour in you beaten eggs or egg substitute
Let it cook while you place your cherries as seen here (I removed the pits)
Sprinkle in just a little Gorgonzola or Goat Cheese would taste quite nice here
Let it cook.
(If you think the cherries could be sweeter, put some liquid Stevia drops (tiny drops!) on the cherries)
Then fold it over and cut it in half. That makes it easy for flipping and proper portions. *I call it “Portioning.”
I ate this 2 hours before a long run last Sunday and again this Sunday. I would not do Cherries in the evening but I suppose you could do this for lunch on a weekend:).
I got a little indulgent here! I usually only place 1 jarred peach (Trader Joe’s) with my 1/4 cup of cottage cheese.
This makes for a nice breakfast or mid-day snack.
Optional: a sprinkle of sliced almonds
I DO NOT KNOW ABOUT YOU, but sometimes I buy more lettuce than I have the nerve to eat! Throwing an omelette over a bed of lettuce just let’s me ensure no green goes to waste and that I spread the love of all this protein I am getting for either lunch or dinner.
Besides saving my lettuce, I like that this meal is both hot and cold.
I make the Omelet similar to how I made the Cherry Omelet but in this case:
Pour eggs over hot olive oil that has warmed up in the pan
Throw in Banana Bell pepper slices or (pre-fry up some fresh jalapeno)
Sprinkle some mixed blend Trader Joe cheese over the peppers
Sprinkle garlic powder over the cheese
Place pepperoni over the cheese like you are making a pizza
Let the egg continue to cook and then fold it over!
Cut that in half, place over a bed of lettuce. Don’t forget to cut up some tomatoes you bought. That’s a nice cool garnish! Cut it up, mix it up and enjoy! (I do!)
Alright, so you bought all those Roma Tomatoes and you did not make a salad again. What a pity!
Fear not! There is always more fun to be had with this luscious red fruit!
You will need to go to Korea Town or Little Tokyo to find this creamy Sesame Dressing but it is SO WORTH the journey.
Slice up the tomatoes decently thick
Open up can of tuna and break up chunks over the tomatoes
Pour some Creamy Sesame Dressing
(I put some Furikake or Rice Seasoning over it but it didn’t really do much- the dressing is just fine on its own)
Enjoy! This is super low-calorie, low carb, low sodium and so simple! You WILL be full!
I use this as a mid-day snack 10:30am or 3pm. This photo is just the slicing of one tomato. You may want to bring a container for the extra tuna or just cut up another tomato. This is not gonna tip the scale but it will fill you up!
Remember that other half of the omelet from the Omelet Salad? Well, I just threw a slice of Swiss Cheese and some pepperoni over it and microwaved for probably 30-40 seconds. I can just enjoy this as is.
Usually, I run with Charlie and follow that up with some weight lifting. I am not so hungry. I may have Carnivor shake or this first but often, all I want is WATER:).

Right now, I am still managing portion size. Sometimes, I am so good and other times, I need someone to smack me on the hand for going back for seconds! I truly want those killer abs!!! I am almost there!
